Strawberry delight mocktail


400g strawberries, cut into quarters

5cm piece of ginger, grated

200g (scant 1 cup) white sugar

Small pinch of salt

20ml (1 1/2 Tbsp) lemon juice

80ml (4 1/2 Tbsp) apple cider vinegar

Soda water and ice, to serve


Macerate the cut strawberries, grated ginger & lemon juice with the sugar overnight.

The next day muddle all the strawberries to make a puree

Strain the  puree into a bottle, add the vinegar and give it a shake, so it’s well combined.

To serve, stir 30-45ml of fruit puree with 120ml soda water and crushed ice into a glass,

Store any remaining puree in the fridge, if it’s in a sealed container it’ll last a week or 2.
